Dingle
Dingle is an Irish whiskey distillery in the town of the same name, located in County Kerry on a peninsula on the Atlantic coast. It is housed on the site of a converted sawmill and is part of The Porterhouse Group which also operates breweries and bars. The distillery was established in 2012 and was the brainchild of the company's founders, Oliver Hughes and Liam LaHart.
The distillery uses copper pot stills from Forsyths in Scotland, triple-distilling both single malt and single pot still Irish whiskies and ageing them in port, sherry, madeira or bourbon casks. It also produces vodka and gin.
The Dingle brand name is used to bottle all of the spirits produced at the distillery, however the vodka and gin use a different bottle design. They were also the first to be released and were marketed by the distillery exclusively until its first casks of whiskey reached maturity.
Its first single malt whiskies were bottled in 2016, followed by its first single pot still in 2017. The release of the latter was the first new single pot still whiskey from an independent distiller for many decades. Its earliest releases were offered in numbered small batch releases, aged in a variety of cask types and offered at both reduced and cask strength.
The first and only current proprietary expression was introduced in 2021 and is a non-age statement single malt aged in first-fill bourbon and sherry casks.
