Clonakilty
Clonakilty distillery is located in the town of the same name in Ireland's County Clare. The idea for the distillery was conceived by Michael Scully, a local farmer, and its production chain is entirely self-sufficient in barley through his neighbouring fields. It filled its first casks on 1st May 2019.
Operating three copper pot stills, Clonakilty produces single pot still Irish whiskies alongside vodka and gin that it markets under the Minke brand name.
The distillery's own single pot still spirit is yet to be bottled, earmarked for its debut release in 2024. The Clonakilty brand, however, was introduced before the distillery was even built, with the first releases debuting in 2018. It was produced using small batches of blended Irish whiskies and subsequent releases have also included single malt and single grain whiskies from undisclosed sources.
The current core range is comprised of various batch releases of cask-finished blended and single grain Irish whiskies. A single malt called Galley Head was added to the portfolio in 2021.
