Wolfburn Dornoch Whisky Festival 2016

Located in Thurso, this is the Northern most distillery on the UK manland. Based around a long lost distillery that ended around 1850, this new Wolfburn reopened in 2013.

Caol Ila 1981 Dewar Rattray 31 Year Old

Distilled in 1981 and matured in bourbon hogshead for 31 years before being bottled in 2012.

Wakatsuru Shuzou Sun Shine 20 Year Old

A rather unique unusual single malt from Wakatsuru distillery, Japan.  Wakatsure is an established Sake brewery that decided to distil malted barley, which has since been bottled.

Distilled in 1990 and matured for 20 years in refill American White Oak, cask numbers #311 to #315, this release was of approximately 500 bottles.

720ml bottle.

Located in Thurso, this is the Northern most distillery on the UK mainland. Based around a long lost distillery that ended around 1850, this new Wolfburn reopened in 2013. 

This release marks the 60th Anniversary of La Maison du Whisky.

An Ex-Bourbon American Oak Barrel and a European Oak Octave we laid down and married together to create this limited bottling.

One of 589 Bottles.

Chichibu 2009 The Peated

This is from one of the newer Japanese distillery Chichibu. Distilled in 2009 and bottled in 2012, this has been produced from heavily peated malt. 

The barley used had a phenol level higher than most Islay malts. 

Bottle number 4254 of 5000.

Cardhu 1982 22 Year Old Cask Strength

An often overlooked distillery that's current output is primarily exported to mainland Europe. This is a more full flavoured example as it is cask strength and 22 years old.

Caol Ila 1983 Wemyss Malts / Harbourside Brazier

Distilled in 1983 and then bottled in 2015, this Caol Ila is refered to as \"Harbourside Brazier\"

One of 280 bottles. 

Cask Reserves Blended Malt Gleann Mor 40 Year Old

'A Rare Find' indeed. This is a blended malt whisky produced by Gleann Mor that consisits of single malts no younger than 40 years old. A very complex and interesting dram for sure.

Presented in a superb glass decanter.

Distilled, matured, and hand bottled in Scotland.

Coleburn 1972 Gordon and MacPhail

Distilled in 1972 and bottled by Gordon and MacPhail in 1999.

Coleburn is yet another of the many distilleries that didn’t make it through the 1980s, the production equipment is now gone so this will never produce again.

Wolfburn Kylver Series Limited Edition

Located in Thurso, which is the Northern most distillery on the UK mainland. Based around a long lost distillery that ended around 1850, this new Wolfburn reopened in 2013. 

This is one of their first single malt releases. The Kylver series has a cask \"that is doing something different\". 

Craigellachie 1973 Rare Malt 22 Year Old​ 

The Rare Malts are a Limited Edition series of cask-strength single malts, issued, and designed by Diagio to show off some of the lesser known distilleries in their empire, these bottlings are sought after by collectors and drinkers alike.  

This 22 year old Craigellachie was distilled in 1973 and is bottle no. 4285, bottled in 1995.

Caol Ila 2001 Feis Ile 2012

Distilled in 2001, matured in Sherry butt number 300897 then bottled for the Feis Ile 2012 at cask strength.

Distilled in 1992 and bottled in 2014 after being matured in a single cask.

The first edition of the ever popular unpeated Caol Ila whiskies, released as part of the Diageo Super Premium whiskies.  This unpeated spirit was originally intended for blending purposes, now there are a variety of single malt offerings from Caol Ila using this spirit.

Distilled in 1997 and bottled in 2006. 

One of 12,990 bottles.

Cooley Peated Cadenhead 21 Year Old

Cadenhead's also bottle Irish whiskey.

This is a bourbon barrel matured for 21 year old Cooley bottled July 2013.

Distilled in 1998 and bottled in 2015 for the Feis Ile that has been triple matured in three seperate casks.

Chichibu On The Way 2015 Release

Ichiro Akuto's Chichibu distillery has be producing malts for a while now, this was released in 2015 and is made from various vinatges from 2008 onwards. All matured in bourbon casks then finished in Mizunara.

Caol Ila 2000 Feis Ile 2011

Released for the annual Feis Ile, in 2011 this Caol Ila was hand selected by Billy Stitchel and was matured in sherry cask 301696.

Compass Box Juveniles

From the Compass Box archives: 

\"Made for Tim Johnston and his Juveniles wine bar in Paris. Originally, we made something just for Tim to sell at his restaurant, but our French importer, then all our European importers, asked to sell it. The whisky combined three malts (distilled in the villages of Brora, Longmorn and Muir of Ord), all aged in first-fill bourbon barrels.

This was one of the first malts ever to be able to boast this type of high quality oak aging. Unfortunately, when the distillery owner of each of the distilleries ran out of aged stock of this quality, we decided to retire the whisky.\"
