Daftmill
Daftmill is a single farm distillery located in Fife region of Scotland. It is owned and operated by the Cuthbert family and is entirely self-sufficient in barley which is harvested from its own fields, which also produce carrots and broccoli. Ian and Francis Cuthbert were granted planning permission to convert the farm's old mill buildings into a distillery in 2003, completing the project over the next two years. Its distilling license was then granted on 30th November 2005.
As a working farm, the distillery is only operational during its quiet periods in mid-summer and mid-winter, sometimes producing as few as 100 casks per year.
Unlike many other newly established Scotch whisky distilleries in the 21st century, Daftmill was in no rush to release its single malt and its its Inaugural Release was a cask strength 12-year-old, introduced in 2018 via the a distribution deal signed with Berry Brothers & Rudd the year prior.
Due to the limited production capacity at the distillery, there is no regular Daftmill core range. Instead, a Summer Batch and Winter Batch is released annually, occasionally several at a time in order to serve different distribution markets, as well a various single cask bottlings. Daftmill releases are generally popular with enthusiasts for their informative labels that often detail barley types, the fields they were grown in and where they were malted.
