Ballykeefe
Ballykeefe is an independent, family-owned distillery located in County Kilkenny where the first written account of distilling in Ireland was documented in the Red Book of Ossory back in 1324. A single farm, grain-to-glass distiller, Ballykeefe was built by the Ging family in 2016 and commenced production in August the following year.
The distillery produces single pot still, single malt and single rye whiskey, all of which is triple-distilled on bespoke-designed, Italian-made, copper pot stills.
The Ballykeefe brand incorporates all of the distillery's spirits production, which includes vodka, gin and poitín as well as Irish whiskey. These unaged spirits were therefore its inaugural releases.
The first Ballykeefe whiskey was bottled in early 2021, with their distillery's first release an example of its single pot still production, followed shortly by its debut single malt. The proprietary whiskey range from the distillery currently comprises regularly bottled, reduced-strength, single cask bottlings of each.
