This single cask Yamazaki was distilled in 1999 and matured in single puncheon #DQ70032 until bottling in 2012.

Distilled on the 10th of October 1989 at their Yoichi distillery on Japan's north-most Island of Hokkaido. 

Matured in single cask 127032 untill bottling on the 29th July 2005.

  This is a refill sherry cask matured single malt, produced at their flagship Yamazaki distillery. Distilled in 2008 and bottled at a higher strength of 53%.
• Yamazaki 2009 Montilla Wine Cask 50cl / The Essence of Suntory 
  A Montilla wine cask matured single malt, produced at their flagship Yamazaki distillery. Distilled in 2009 and bottled at a higher strength of 55%.
• Yamazaki 2009 Spanish Oak 50cl / The Essence of Suntory
  A Spanish oak matured single malt, produced at their flagship Yamazaki distillery. Distilled in 2009 and bottled at a higher strength of 56%.

Sanmi-Ittai Pure Malt Single Cask #9585 & #9586 2 x 70cl

A blended malt whisky from Toashuzo Co, the proprietors of the now legendary closed distillery, Hanyu. Sanmi-Ittai is Japanese for the latin term Trinitas, in reference to the three founders of the distillery in the 1940s. The trinity comprised Shimazaki and Inoue (both still credited as blenders for Toashuzo's Golden Horse brand), and a Mr Akuto, the grandfather of Chichibu distillery founder, Ichiro Akuto.

Sanmit-Ittai is a blended from one of the final remaining Hanyu casks, and selected other malt whiskies of an undisclosed origin, further matured in a series of other single casks.

This lot contains cask #9585 and #9586.

Interestingly, not all of Suntory's whisky is matured at the distillery where it was produced. Larger casks such as butts and puncheons are kept at Yamazaki due to its warmer temperatures, whereas the colder climate at Hakushu distillery is better suited to Suntory's smaller casks such as barrels and hogsheads.

The majority of casks however are kept at Suntory's Ohmi Ageing Cellar, a vast warehouse situated forty miles northwest of Yamazaki. In addition to efficiently harnessing climatic conditions, this arrangement also prevents an entire distillery’s stock being lost in the event of a natural disaster – a serious possibility in an earthquake-prone area such as Japan.
